Vegan lemon and poppy seed muffin



Ingredients


300g self raising flour

1tsp Baking powder

185g sugar

2tbsp poppy seed

120g vegan butter

230ml oat milk

2 lemon zest


Method

  1. Melt Vegan butter and add to oat milk in a bowl

  2. Add the rest of the ingredients and mix well

  3. Even spoon mixture into muffin cases

  4. Bake at 150 for 25 mins


While muffins are baking


2 lemons

200g icing sugar


Method

  1. Mix together lemon juice and icing sugar

  2. When muffins are removed from oven spoon icing on top and leave to cool
