Ingredients
500g butter
400g light brown sugar
600g oats
280g plain flour
200g golden syrup
100g fried fruit
Method
Melt butter, golden syrup and sugar in a pan on a low heat
Mix in oats and dried fruit
Sift in flour and mix well
Line a tray with grease proof paper and pour in mix
Bake at 160 for 20-25 mins
While flapjack is baking...
175g butter
200g icing sugar
170g golden syrup
28g ground ginger
Melt butter and golden syrup in a pan on a low heat
Sieve in icing sugar and ground ginger
Whisk until there are no lumps
Pour over cooked flapjack once cooled
Leave to set
