Ginger flapjack



Ingredients


500g butter

400g light brown sugar

600g oats

280g plain flour

200g golden syrup

100g fried fruit


Method

  1. Melt butter, golden syrup and sugar in a pan on a low heat

  2. Mix in oats and dried fruit

  3. Sift in flour and mix well

  4. Line a tray with grease proof paper and pour in mix

  5. Bake at 160 for 20-25 mins


While flapjack is baking...


175g butter

200g icing sugar

170g golden syrup

28g ground ginger


  1. Melt butter and golden syrup in a pan on a low heat

  2. Sieve in icing sugar and ground ginger

  3. Whisk until there are no lumps

  4. Pour over cooked flapjack once cooled

  5. Leave to set
