BBQ glazed pork ribs



5 portions

Allergens: Sulphites; Celery; Fish


Ingredients


2 racks pork ribs

1 large bottles of coke

Salt and pepper


Ingredients for pork ribs marinate


500g tomato sauce (ketchup)

150 g brown sugar

2 garlic

50 g apple vinegar

1.5 tbsp tomato paste

2 tbsp Worcestershire

3 tbsp smoked paprika

1 tbsp cayenne pepper



Method

  1. First prepare pork ribs taking off any excess fat

  2. Put them in a semi deep gastro, season well with salt and pepper

  3. Pour in coke

  4. Cover with tin foil and wrap twice tightly

  5. Cook in oven for 2,5 hours at 160°C until tender, not falling of the bone

  6. Remove from pan and drain off any excess liquid

  7. These are now ready to be chilled

  8. Once chilled, portion ribs into 2 bones, then marinate (see method below) is ready to go on them

  9. Cover well with marinate and leave over night

  10. When ready to cook remove ribs from gastro and put into a clean gastro

  11. Roast in oven for 20-25 minutes

  12. Ready to serve


Method for marinate


  1. Roughly dice onions and chop garlic

  2. Sweat off in a pan on a medium heat

  3. Once soft add all other ingredients

  4. Continue to cook on a low heat for 15 minutes

  5. Put into food blitzer and blitz until a smooth sauce

  6. Season with salt

  7. Store in fridge until needed
