Macaroni cheese with truffle



Ingredients


Milk 500ml

Butter 3tbsp

Flour 3tbsp

Cheddar 250g

Mozzarella 250g

Blue cheese 100g

Macaroni 400g

Mustard 2tbsp

Truffle oil 1tbsp

Salt and pepper


Method

  1. Melt butter in a pan on low heat

  2. Pour in flour and mix well to make a roux, cook this for a couple of minutes

  3. Heat milk up in a separate sauce pan until simmering

  4. Add half of the hot milk to the roux. Keep roux mix on a medium heat, whisk together

  5. Once this has thickened add rest of hot milk and keep mixing with whisk until smooth

  6. Grate all cheese and mix into white sauce

  7. Add mustard and truffle oil and mix again

  8. Get a large sauce pan and fill with salted water

  9. Plunge macaroni into boiling water, cook for 6 minutes. Make sure to stir pasta every minute so the pasta doesn’t get stuck to the bottom

  10. Remove pasta from water and add to cheese sauce

  11. Pour mac and cheese into a baking dish

  12. Put grated cheddar over the top and bake for 20 mins until golden in colour
